Low FODMAP Salsa

Just because you are low FODMAP doesn’t mean you should have to miss out on the strong delicious flavours of Mexican food. This salsa will be a fiesta for your taste buds and have you coming back for more AND keep your gut happy!

Ingredients
- 2 tsp The Friendly Food Co. Na’cho problem Spice Mix
- 1/2 yellow capsicum
- 2 large tomatoes
- 4 slices jalapeno – in brine OR to spice preference
- 1/4C chopped green tips spring onion
- 1/2 lemon juice
- Sprinkle salt
- Coriander and parsley to flavour
Method
- Finely chop all ingredients and mix together.
- Chill in the fridge for a minimum of 30 min prior to serving.
- Serve with your favourite low FODMAP Mexican dishes, with corn chips or on top of your baked potatoes.
