Low FODMAP Crispy Cajun Potato Pom Poms

Leftover mashed potato has never tasted so good! Ideal as a snack or a crowd-pleasing appetiser, these crispy Cajun delights are a savoury sensation, bringing together the satisfying texture of perfectly crisped potatoes with the irresistible Cajun seasoning.

Ingredients
- 3 cups of leftover mashed potato
- 1/2 cup corn flour or other gluten free flour
- 2Tbsp For Every O’Cajun Seasoning
- Spray oil
Method
- Preheat the air fryer to 190 degrees celcius.
- Add your leftover mashed potato to a bowl along with corn flour and Cajun seasoning. Mix together until combined. It should form a consistency similar to cookie dough.
- Roll your potato dough into small balls, approximately 4 cm diameter, and place them in the airfryer. Spray with cooking oil spray and cook for 15-20 minutes or until crispy and golden.
- Serve your crispy potato pom poms as an appetiser or side with your favourite low fodmap dips.
